Since buying my Instant Pot last year, I've fallen in love with it. I make lentil or rice in it at least twice a week, with some sort of tasty stew or meat dish on the weekend. One of my favorite tasty, easy, and cheap meals is this Instant Pot cheesy southwestern lentils & brown rice recipe.

My Instant Pot has even replaced my rice cooker. I eat a lot of brown rice, while I find the default rice setting is more for white rice. However, once you discover the best rice ratios and time, you can cook pretty much anything in it! Instant Pot has some additional tips on cooking rice that I found helpful.

At the end of the day, it's almost too easy to throw a bunch of ingredients into an Instant Pot and have a full, delicious meal less than an hour later.
